Vegan Orange Muffins

These vitamin C infused cupcakes are nothing less than incredible!!! The crispy top gives it a nice texture & the orange glaze to top it off is out of this world amazing. Give these a try…no eggs, butter, or milk!

Yield:16

Ingredients:
-2+1/4 cup flour
-1+1/2 cup turbinado sugar
-1+1/2 teaspoons baking soda
-3/4 teaspoon salt
-1+1/2 cup orange juice
-1+1/2 tablespoons orange zest
-1/2 cup vegetable oil
-1+1/2 tablespoon apple cider vinegar
-2 teaspoons vanilla

Orange Glaze:
-1 tablespoon orange zest
-1/4 cup orange juice
-1+1/4 cup powdered sugar
-1 teaspoon vanilla

Directions:
In a large mixing bowl, combine the flour, sugar, baking soda and salt. In another bowl, mix the orange juice, oil, vinegar, and vanilla. Using a mixer, combine the dry and wet ingredients until the batter is smooth. Bake at 350 degrees for about 25 minutes
To make the orange glaze: whisk the ingredients together until the consistency is thick and smooth.

When the cupcakes are cool, generously top them with a spoonful of orange glaze.
