Move over biscotti, ka’ak is the BEST COOKIE EVER with coffee/tea.
Yield: 36
Ingredients:
-3 cups all purpose flour
-3 eggs
-3/4 cup vegetable oil
-1 cup sugar
-1 teaspoon baking powder
-2 teaspoons anise seeds
-1-2 teaspoons ground cardamom
-1/2 cup toasted sesame seeds
Directions:
Preheat the oven to 350 degrees.
Mix the eggs, sugar, baking powder, and vegetable oil, until your mixture is evenly blended. Then you add the flour, anise seeds and cardamon and give it a final stir-make sure there’s no lumps in your dough.
Take pieces of your dough and roll them into balls, then slightly flatten it, like so:
Place your toasted sesame seeds on a plate, and gently pat down one of the faces of each piece of your circular dough:
Your ka’ak dough pieces will look like this after you’ve placed sesame seeds on one side (NOTE: it’s much more flat than when you first started). Place them on a non-stick cookie tray
Once baked (for ~20 minutes, or until the top is a light golden brown color), it will slightly rise–make sure to let them cool before you serve 🙂
