These cookies are super soft, guilt-free, and don’t taste “healthy” at all! I was surprised how flavorful they are, and they literally take 15 minutes max–prep and baking time!
Yield: 15
-1 egg
-1 cup almond flour
-1/4 cup coconut flour
-1/2 teaspoon baking soda
-1/2 cup coconut sugar
-1/4 teaspoon salt
-1 teaspoon vanilla
-1/4 cup coconut oil
-chocolate chips
Directions:
Preheat oven to 350 degrees. Mix the egg, coconut oil, coconut sugar, and vanilla into the bowl. Add in the coconut flour, almond four and baking powder. mix until well combined. Toss in the chocolate chips and start placing the dough onto your pan. I had 15 cookies that were smaller in size, you could put more dough for larger cookies.
Bake for 6-7 minutes. Take out of the oven and let the cookies stay on the pan until cool.

I have celiac disease and accidentally read “guilt free” as “gluten free”. I almost passed away when I ate these and it was dang worth it! My small intestine is destroyed but, in my opinion, it’s an overrated part of the GI tract!
