Energy Balls

These little balls of goodness are amazing!! Perfect for a snack at work or school, pre/post gym workout, or just when you’re on the road and you’re having a long day and need something healthy to snack on that’ll give you energy and curb your appetite!

I make these regularly and have them on hand in the refrigerator ready to pack when I’m on the go, or to eat during the day at home.

Yield: ~20 (depending on how big you make the energy balls)

Ingredients:

  • 1 cup (dry) oatmeal (I used old-fashioned oats)
  • 1/3 cup toasted coconut flakes.
  • 1/2 cup peanut butter (or any other nut butter)
  • 2 tablespoons ground flax seeds.
  • 1/4 cup semisweet mini chocolate chips
  • 1/3 cup honey or agave nectar.
  • 2 tablespoons chia seeds
  • 2 teaspoons cinnamon
  • 1 teaspoon vanilla extract.
  • nuts of choice

Directions:

Place the honey, peanut butter, and vanilla in a microwave safe bowl and microwave for about thirty seconds, or until the mixture can easily be mixed. Combine this mixture in a big bowl with all the other ingredients. Refrigerate for about 30 minutes so it’ll be easier to roll the mixture into balls. After you refrigerate, simply take pieces of the mixture and roll it into balls with your hands and place it in the refrigerator for long term storage.

 

 

*If your mixture appears to be too dry–>add more honey

*If your mixture appears to be too wet–>add more oats
