Spring just reminds me of pretty flowers the sun, and the start of bright colors everywhere. These cupcakes are light and a change to all the holiday spiced, peppermint, and chocolatey items that have been around all winter long! These cupcakes are light and airy-and so delishhh! I made these for one of my best friend’s bridal showers 🙂 Check out the dessert display below !
Yield: 32 mini cupcakes
-1 + 1/2 cups cake flour
-1 +1/2 teaspoon baking powder
-1/4 teaspoon salt
-1/2 cup melted unsalted butter (1 stick butter)
-1 cup white sugar
-2 eggs
-1 tablespoon vanilla
-1/2 cup milk
-1/2 cup chopped strawberries
Whipped Cream Frosting:
-1 cup heavy whipping cream
-3 tablespoons powdered sugar
-1 teaspoon vanilla
-1 and 1/2 tablespoons strawberry jam
-1 drop of red food coloring (optional)
Cupcake Directions:
Mix the flour, baking powder, salt, and beat in the butter gradually. Beat in the sugar and mix thoroughly. Beat in the eggs, vanilla, and milk. Stir in the strawberry chunks. Pour into lined cupcake pan and bake at 400 degrees for about 20 minutes.
Whipped Cream Frosting:
Place your heavy whipping cream in a bowl and mix with an electric mixer until it’s a thick consistency(approximately 6 minutes), then slowly add in your powdered sugar, and mix until it’s fully incorporated-finally, add the strawberry jam and remove from the mixer when the frosting is fully incorporated.
